January Meal Plan with Recipes Linked!

The holidays are over and so is my sweet tooth, or at least it needs to be! We ate and drank everything we wanted the last few months and I have zero regrets! Cookies + wine are my favorite. But along comes the new year and I always get the urge to just clean up our act a little bit.

Here’s the Plan:

Joe and I sat down over the weekend and pulled together a handful of dinner ideas (focusing on whole foods and high protein) to make a full January meal plan. We used Pinterest and searched terms like Whole 30 dinner ideas, Paleo dinners, and healthy dinner ideas. We are in no way doing either of those plans but they do give you meal ideas with whole food, high protein, low sugar- which is where we’re going to focus.

Our general rule of thumb to this meal plan is to eat healthy foods Monday through Saturday and then ease up on Sunday. This is by no means a diet or a good food versus bad food, but just our on personal way of fueling our bodies while still enjoying ourselves. Balance, right? Also, wine is not off the table. We have three little kids.

Breakfast Recipes:

MUFFINS (CHOCOLATE PB BANANA, BANANA SPINACH, BLUEBERRY). Still on the hunt for a good blueberry muffin recipe- if you have one send it over!!

SMOOTHIES (CHOCOLATE PB, VANILLA SPICE, CINNAMON ROLL) Smoothies are good because the girls love them so its a quick way to get everyone fed with minimal clean up.

AVO TOAST ON SOURDOUGH W/ HARDBOILED EGG- the PERFECT (and easiest) hard boiled egg recipe from Magnolia. I make 12 at a time!

PROTEIN BITES– I complain about rolling these out but if you can grab an extra set of hands to help, they are WORTH IT. Oh, and add the flax and chia, trust me.

OVERNIGHT OATS- I made these for the first time ever yesterday and LOVED IT. I took ideas from a few different blogs and then totally winged it so I’ll make more this week and write down what I did to share!

Dinner Recipes:

This looks SO good and I love butternut squash “noodles”! SLOPPY JOES  W/ BUTTERNUT SQUASH NOODLES + BROCCOLI

We are LONG time favorites of this BURGER BOWLS W/ FF + BIG MAC SAUCE recipe! I use frozen burger patties from Costco to make it quicker! The sauce is an ABSOLUTE must make!

CHICKEN + BROCCOLI with cauliflower rice to satisfy that Chinese food craving!

SWEET POTATO BURRITO BOWLS w/ black beans, avocado, cauliflower rice and salsa. This is such a good hack for lunch and dinner! Basically starting with cauliflower rice and a protein and then topping with anything you have on hand!

We are both so excited to try PALEO BUFFALO CHICKEN CASSEROLE from Healthy Little Peach Blog!

FAJITA BOWL (CHICKEN SHRIMP BEEF OR VEGGIE) GIVE ME ALL THE MEXICAN FOOD.

A true menu planning staple. BREAKFAST (EGGS, BACON, SWEET POTATO HASH) I use this recipe as a starting point and just use what I have on hand.

MEATLOAF W/ BROCCOLI + SWEET POTATO I LOVE this recipe and it’s so easy to make.

This has been in our meal plan multiple times and the whole family loves it. I’ve been doing a tater tot crust but we’ll switch the sweet potato and see how that goes. Crustless was really good, too, just wanted to add another something to it. HAM + CHEESE QUICHE w/ sweet potato crust. I spray my pie dish with avocado oil, use a mandolin to slice sweet potato and line the pie dish with them. Spray sweet potatoes with avo oil + bake until they’re just a little crispy on the edges. Then I fill with the quiche mix and bake according to the recipe from The Gay Globetrotter Blog.

TACOS W/ LETTUCE SHELLS- nothing fancy here, just our usual taco dinner with Siete taco seasoning and romaine lettuce “shells.” Oh, and ALL the fresh toppings!

SAUSAGE SHEET PAN W/ PEPPERS + SWEET POTATO- I can’t find the recipe for this. We’ve been eating it for so long that I just wing it now. I use sugar free chicken sausage, 1-2 peppers, half an onion and a sweet potato, peeled and diced. Toss it all in avocado oil + season to your liking. Top with banana peppers if you like spicy. Bake at 350 until sweet potatoes are fork tender, 35ish minutes. We always top with Yellow Bird Blue Agave Sriracha (clean ingredients!).

And that’s it! We’re rotating through these (some more than others) and planning for take out on Sundays, unless I have the urge to cook something specific. I’ll keep you posted on how it’s going over at @Emma.Prentiss on IG! xo
