Our favorite Green Muffins!

I have been making and raving about these spinach muffins for YEARS! I found them on Pinterest when Harper was probably two years old and they quickly became a family favorite. I have made very few changes to the original recipe and totally credit the idea to the blog, Moms and Stories!

Here is my version of their recipe!

Green Muffins

Preheat the oven to 350 degrees.

In a Ningxia Blender cup:

1/2 cup of applesauce (or 1 applesauce cup)

1 large egg

1 tsp vanilla

1 banana

1/3 cup of maple syrup

2 cups of fresh spinach (I don’t measure this- just shove a bunch in)

2 tablespoons of coconut oil

Blend until smooth.

In a bowl sift your dry ingredients:

1 1/2 cups (210g) of flour

1 tsp baking powder

1/2 tsp baking soda

1/4 teaspoon of salt

Whisk dry ingredients and then add the blended liquid to the bowl.

Don’t over mix. Spoon into a greased muffin tin. Bake at 350 degrees 17-19 min for muffins or 14-16min for cupcake size. Remove from the oven when the edges are browned + the tops are set.

so delish served warm with a little butter!

If you’re really looking to increase the amount of greens you’re getting into your kids you can add one of Young Living’s MultiGreens capsules. I just pull it open and add it to the blender before mixing. It’s full of all the good stuff I would never be able to feed the girls or myself, honestly.
